Shibata Brewery was founded in 1830 in Okazaki, Aichi Prefecture, and built its brewing identity around a source of exceptionally soft spring water called Kanzui, or Divine Water. Their representative brand, Konotsukasa, reflects the brewery's nearly two centuries of dedication to handcraft using this prized water. Located in the historically significant castle town of Okazaki, the brewery continues small-scale traditional brewing under the same family lineage that established it during the Edo period.
