Founded in Meiji 5 (1872) in Kakegawa, Shizuoka Prefecture, Doi Shuzojo built Kaiun around the skills of the Noto toji tradition and its own precision rice-milling program. The brewery developed the Shizuoka yeast HD-1 and has earned seven consecutive gold medals at the National New Sake Competition from 2003 through 2009. The flagship Kaiun range spans honjozo to junmai daiginjo, all brewed to be food-friendly: clean, unheavy, and balanced rather than sweet or strongly aromatic.
