Kaimei

Motomiya Saketen was established around 1790 in Unomachi, Seiyo City, Ehime Prefecture, a historic post town of the Uwajima clan where the front warehouse dates to the Kansei era and the brewing facility to the Ansei era, both still standing after more than 200 years. The Kaimei brand is produced using Yamada Nishiki rice grown on the brewery's own fertile fields and spring water drawn from the Ameyama mountain behind the facility, and pressed using the traditional hand-squeeze Soushibori method that has become rare even among established breweries.
