Yachiya Shuzo in Kanazawa, Ishikawa Prefecture traces its origins to 1628, when the founding family received both the Yachiya trade name and the Kagatsuru brand from the Maeda domain, connecting the brewery directly to the Kaga clan's sake culture. The historic brewery building is registered as a tangible cultural property by the Agency for Cultural Affairs, preserving the architectural heritage alongside centuries of brewing tradition. Kagatsuru is brewed with Gohyakumangoku and Yamadanishiki rice and soft water from the Ioh Mountain system, with the cellar master long counted among the elite of the Noto master brewer lineage.
