Description
From Yachiya Shuzo, a Kanazawa brewery founded in 1628 and associated with the Kaga domain, this daiginjo uses Yamada Nishiki polished to 40%, brewed with soft water from the Iozan mountain system. Toji Shoji Yamagishi, recognized as one of the Four Heavenly Kings of the Noto toji school, has guided the cellar to nine gold medals at the National New Sake Competition.
