Named Kome no Tamashii (Soul of Rice), this Gohyakumangoku junmai from a 430-year-old Kanazawa brewery carries a straightforward declaration of pure-rice intent. The variety's characteristic clean grain umami is brewed with Ioji mountain water under Noto toji tradition.
