Inata Honten, founded in 1673 in Yonago City, Tottori Prefecture, named its Inatahime brand after the legendary beauty Kushiinadahime, the divine princess of Izumo mythology who appears in the tale of the Yamata no Orochi slaying set in this very region. Current toji Shinki Makoto leads brewing that draws on three sake rice varieties โ Gohyakumangoku, Yamada Nishiki, and Tottori's regional Goriki โ with Goriki, known for its firm acidity and structured body, serving as the primary ingredient across the lineup. The brewery has received recognition at the National New Sake Tasting Competition and maintains a philosophy of engaging carefully with each ingredient from rice washing through fermentation.
