Sekiya Brewery, based in the mountain village of Shitara in Aichi Prefecture, brews Houraisen under the guiding principle of wa jo ryo shu (harmony in brewing yields fine sake), pursuing high-quality sake through a combination of traditional technique and selectively adopted modern equipment. The brewery's deep commitment to rice extends to cultivating its own varieties, including the regional specialty Yumesansui, and even participating in seedling cultivation for some strains. The lineup ranges from junmai daiginjo to seasonal sparkling styles, with the Houraisen Wa series standing out as a benchmark of local sake in Aichi.
