Houou Biden was founded in 1872 in what is now Koyama City, Tochigi Prefecture, in an area historically called Mitamura, meaning Beautiful Fields Village, and the brand name itself encodes this origin: Biden for the beautiful rice fields and Houou for the mythical phoenix. The brewery shifted its focus almost entirely to junmai ginjo and junmai daiginjo grades, with production relying on traditional hand methods at nearly every stage. The resulting sake is celebrated internationally for its gorgeous aromatics and lush, fruit-forward elegance that evokes sunlight over Tochigi's paddies.
