Fukutsukasa Sake Co., Ltd., founded in 1919, is the only remaining sake brewery in Kushiro, Hokkaido, and has spent over a century crafting sake suited to the seafood-rich cuisine of eastern Hokkaido. The brewery uses subterranean water filtered through the vast wilderness of eastern Hokkaido and sources approximately 90% of its rice from Hokkaido varieties, reflecting a deep commitment to regional ingredients. Fukutsukasa won a gold prize at the National New Sake Competitive Exhibition in 2023, and nearly 90% of production is consumed within the Tokachi and Kushiro regions.
