Founded in 1625, Fukumitsuya is the oldest sake brewery in Kanazawa, Ishikawa Prefecture, and its house brand Fukumasamune has been the city's most widely loved sake since the Meiji era. The brewery draws on water that has filtered through Mount Hakusan over roughly one hundred years, rising from a spring 150 meters underground, giving Fukumasamune its characteristic smooth, savory body with a clean finish. In 1959, the twelfth-generation owner began pioneering long-term aged sake after studying wine aging in Europe, eventually releasing a three-year aged expression in 1969 and establishing Fukumitsuya as a leader in koshu research.
