高野酒造創業於明治32年(1899年)9月8日,正值二十四節氣之「白露」,因此初代品牌名為「白露」。酒造附近有日本第10處拉姆薩爾濕地「佐潟」,全年水鳥飛翔,自然環境優越。所有清酒均採用低溫長期發酵(吟釀釀造)以追求更柔和的口感,以「第一口之後自然想喝第二杯、第三杯」為釀造宗旨,代表品牌有「越路吹雪」「越之冬雪花」「白露」等。
