Senryootokoyama Junmai Ginjo Hishiya is a junmai ginjo from Miyasaka Jozo in Suwa, Nagano, brewed with rice polished to at least 60% and no added alcohol. The Hishiya sub-label designates a style variant balancing fruity ginjo aromatics with the broader, savory depth that characterizes pure-rice brewing. Suwa's highland basin location surrounded by the Japan Alps ensures access to cold, clean water ideally suited to premium ginjo fermentation.
