酒名「小富士」源自松山近海、形似富士山的鯉島「伊予之富士」。島田酒造認為清酒是佐餐之飲,去除多餘的甜味,追求質樸而鮮美、帶著淡淡香氣的酒。全部工序均在廠內完成,堅持用傳統酒船(sakabune)壓榨,並逐瓶以單一水浴方式進行瓶燗(binkan)加熱殺菌,持續走在「不華而不實、內涵深邃」的辛口清酒之道上。
