Nabeshima Junmai Daiginjo Nabeshimamai from Fukuchiyo Shuzou in Kashima, Saga, uses the brewery's proprietary Nabeshimamai rice designation for a daiginjo expression unique to this award-winning producer. Founded in 1924 in the historic Hizen Hamashuku sake-brewing post town, and named IWC Champion Sake in 2011, the brewery produces exclusively ginjo-grade sake with long, low-temperature fermentation and no charcoal filtration for maximum natural flavor expression.
