Despite being labeled with a Aizu Nishiki (Kaizunishiki) reference, this ginjo namagenshu from AKITAKENHAKKO KOGYO uses Yamada Nishiki, the most celebrated sake rice in Japan, grown for its large grain size and high starch content ideal for premium brewing. Bottled as namagenshu, it is both unpasteurized and undiluted, preserving the full intensity of the fresh ginjo aromatics and natural alcohol strength. The combination of Yamada Nishiki and Akita soft water produces a bold, fragrant raw sake with a clean, direct character.
