Yamatomoi Hiire is a heat-pasteurized junmai ginjo from Nakamotoshuzouten in Nara, using the hiire process to stabilize flavor and extend shelf life. Polished to 60% or below and brewed without added alcohol, the sake retains the soft, mellow character typical of pasteurized junmai ginjo. The Yamatomoi line draws on Nara's historic brewing identity, with this version offering a rounder, more settled profile than its namazake counterparts.
