市野屋據傳創業於慶應年間(1865年)。酒藏堅守明治時代建造的倉庫,不依賴機械,從最重要的米洗、製麴、酒母到三段仕込,全程手工操作。大町市位於北阿爾卑斯山麓,釀造用水為海拔900米高處湧出的清澈泉水,泉源周邊植被豐茂,天然過濾後形成的山泉水清澈甘甜。酒米則奢侈地選用大町市及長野縣內栽培的宮島錦、一本錦、山榮錦、白樺錦等減農藥酒造好適米,精心手工釀製。
