1991年,大田酒造將釀造廠從高山市中心遷至自然環境豐富的清見村(現高山市清見區)。釀造用水取自飛驒山脈蘊藏的優質地下水,酒米則使用包括飛驒產「飛驒譽」在內的適合釀酒的品種。工廠內設有多個可達三層樓高的大容量儲酒槽,配備溫度感測器等最新設備,實行24小時全天候管理。
