Honjozo Fuka from Nishikatsu Shuzo is produced in Shiga Prefecture, a region whose sake production draws on waters connected to Lake Biwa, Japan's largest freshwater lake. Honjozo classification adds a limited amount of brewer's alcohol to sharpen aroma and produce a clean, dry finish.
