Hokuyo Ginjo Kizake Shinkironomierumachi Hakuto is a fresh, unpasteurized ginjo from Honjo Shuzo in Toyama, whose name references the atmospheric mirage phenomenon (shinkirou) visible over Toyama Bay in spring, a regional natural wonder that defines the local identity. This seasonal raw sake is crafted with Toyama's famously soft snowmelt water and domestic sake rice, producing a lively, aromatic ginjo with the fresh, forward character that unpasteurized kizake releases are known for.
