Ginjo Tokusen is a specially selected ginjo expression from Niki Shuzo in Hida Takayama, where ginjo-only brewing has been the house style since 1695. The cold alpine climate and clear Hida spring water support a slow, clean fermentation that produces a refined, dry sake with delicate aroma.
