對酒進行低溫殺菌可使酶和酵母失活,從而提高酒的保存性。這一技術自室町時代末期便以「煮酒」之名在杜氏之間廣為人知。在此基礎上進一步精煉發展出「火当て」技術,使日本清酒成為世界上罕見的完全不使用防腐劑的酒類。旭酒造不計成本,在5℃以下充填瓶後以溫水淋浴方式進行熱殺菌並迅速冷卻,將熱處理對品質的影響降至最低。進一步透過將二氧化碳微氣泡化添加於酒中,實現了在65℃15秒以下的短時間內達到同等效果。
