Description

Daiginjo Genshu Shizukutori from Ishimoto Shuzo in Niigata is an undiluted daiginjo produced using the shizuku drip method, where the sake is suspended in fabric bags and allowed to drip out by gravity alone without pressing. This labor-intensive technique yields only a small volume of exceptionally pure, delicate sake free from any pressing pressure. The result is a premium, concentrated daiginjo genshu with refined aromas and a silky, complex texture.
