Gohyakumangoku from Niigata milled to 50% and bottled as a vintage junmai ginjo in Burgundy-style wine bottles with cork. Brewed at Shimizuya Shuzo in Gunma through long-term, low-temperature small-batch fermentation, this 9th vintage presents vivid fruit aromas developing toward pear and a bright, structured acidity.
