Tamajiman Daiginjo da Ishikawa Shuzo, em Fussa, Tóquio, é uma demonstração do compromisso da cervejaria com a produção de sake premium em ambiente urbano. Fundada em 1863 e situada às margens do Rio Tama, a Ishikawa Shuzo utiliza a água subterrânea macia e limpa do rio para produzir sake com aromas frutados delicados e um palato elegante e refinado. A categoria daiginjo exige arroz polido a 50% ou menos e fermentação meticulosa em baixa temperatura.
