A cervejaria cultiva Yamada Nishiki orgânico internamente e utiliza água pura das montanhas de Kyoto. Este sake de nome elegante (neve, lua, flor, Arashiyama) apresenta um aroma ginjo suave com um final transparente e limpo, desta kura de Kyoto liderada por mulheres.
