Junmai Ginjo genshu (não diluído) com polimento de 60%, maturado durante a primavera e o verão antes de ser lançado como um sake de outono hiyaoroshi de única pasteurização, produzido na Yukitsubaki Shuzo em Kamo, Niigata. A maturação prolongada em baixa temperatura arredonda o sabor e aprofunda o umami de arroz, mantendo o acabamento limpo característico da cervejaria.
