Daiginjo elaborado com arroz Yamada Nishiki da Prefeitura de Toyama, polido a uma alta taxa, fermentado a baixas temperaturas por longo período com a levedura Ogawa. Um Daiginjo tanrei e seco, com o discreto aroma ginjo característico da levedura Ogawa e a expansão de sabor suave do Yamada Nishiki. O aroma é contido para não interferir nos pratos, e o perfil do sake foi concebido para ser apreciado durante toda a refeição.
