O envelhecimento por 3 anos em temperatura de gelo (-5°C) preserva o elegante aroma ginjo, desenvolve sabores macios e suaves e expressa as características da levedura Ogawa. O Kiritsukuba foi adotado como sake representativo de Ibaraki em diversas recepções oficiais, incluindo a Cúpula G7 Ise-Shima, o G7 Ibaraki Tsukuba e o G20 Ibaraki Tsukuba.
