Ginjo da Kosaka Shuzojo em Gifu sob o rótulo Hyakushun, produzido com arroz polido a pelo menos 60%, utilizando métodos de fermentação ginjo. O sake ginjo é caracterizado por aromas frutados e florais produzidos através da fermentação a baixa temperatura com leveduras selecionadas. A água de montanha de Gifu contribui para a textura suave e limpa típica dos sakes desta região no interior do país.
