Daiginjo moído a 40% com Yamada Nishiki, elaborado pela Iinuma Honke em Shisui, Chiba, durante o período mais frio do inverno (daikan), com quase 40 dias de fermentação em baixa temperatura. O sake oferece um aroma ginjo frutado que remete a maçã e pera, com uma doçura delicada que se dissolve limpa no paladar.
