O Yamada Nishiki polido a 40% forma a base deste daiginjo da Tsuchiya Shuzoten na região de Saku, em Nagano, uma cervejaria que foi a primeira em Nagano a produzir comercialmente sake da categoria ginjo. O ar frio das montanhas da bacia de Saku e a água subterrânea limpa do sistema do Rio Chikuma sustentam uma fermentação cuidadosa.
