Description

Yamada Nishiki at 70% polishing is brewed to a very dry nihonshu-do of +13 in this junmai from Zuikan, where a fine-grained, supple umami coexists with the sharp cut that defines the house style. Cold serving highlights its clean, crisp edge, while the Arida Shimizu spring water base ensures a consistently clean palate. Locally sourced Yamada Nishiki connects the sake to Hiroshima's northern farming communities.
