Yamada Nishiki polished to an exceptional 35% is brewed using yamahai fermentation, then cellared to develop mellow complexity in this junmai daiginjo from Zuikan in Hiroshima. Yamahai's elevated natural lactic acid and amino acid levels give the sake a structured depth that benefits from the extended maturation. The 'Yamahai 35' label represents the highest tier of Zuikan's lineup, combining heritage method with premium polishing.
