Description

Dobudukuri-style junmai from Yoshinotomo Shuzo in Toyama, using a traditional production method that incorporates all the grain and koji without pressing away the lees in the usual fashion. The brewery polishes its rice to 65% and uses Toyama Prefecture water sourced from Tateyama snowmelt to produce this rustic, characterful expression.
