Yamada Nishiki is polished and pressed into this muroka mukasui (unfiltered, undiluted) junmai daiginjo labeled Jo Aka. The red-labeled version from Nakai Shuzo in Kurayoshi, Tottori is bottled at natural alcohol strength without filtration, preserving full rice character from the Daisen water brewing.
