Yamada Nishiki goes into this daiginjo namazume from Nakai Shuzo in Kurayoshi, Tottori, brewed with snowmelt water filtering through the flanks of Daisen, a national park peak. Pasteurized once and bottled without dilution, it preserves the delicate ginjo fragrance while gaining subtle stability.
