Description

Yamada Nishiki from the Kurume region of Fukuoka is the foundation of this junmai, which shows a juicy, full-bodied rice umami with a rich acidity typical of the variety. The brewery, established in 1818 at the base of Inunaki-san, uses Chikugo River soft water and a young team-based brewing approach for consistent quality. Polish ratio is not publicly disclosed.
