Masumoto Tobei Shuzo's Usuzakura Tokubetsu Honjozo is brewed in Higashi-Omi, Shiga, using rice polished to 60% with small quantities of brewer's alcohol to brighten the aroma. The Suzuka mountain water imparts softness, resulting in a clean, lightly fragrant honjozo with a dry, versatile finish well-matched with traditional Japanese cuisine.
