Ususakura is produced by Masumoto Tobei Sake Brewery in Higashi-Omi, Shiga Prefecture, the only remaining brewery in the Notogawa area. The brand name, meaning pale cherry blossom, was chosen by the founding brewer Tobei, who was moved by the blossoms on the grounds of a nearby shrine and wished to create sake of equal beauty; the fifth-generation brewery continues small-batch production using Suzuka Mountain groundwater and Shiga-grown rice.
