Tomitsuru Hiden Tezukuri Honjozo (秘伝手造り本醸造) uses Tama Sakae (玉栄) rice polished to 70% in a secret-recipe handcrafted honjozo from Aichi Shuzo in Aishō-cho, Shiga. Founded in 1869 near Lake Biwa, this tiny brewery uses the Tama Sakae variety, a Shiga-origin sake rice grown in the region since the 19th century, with Suzuka mountain range water.
