Tomitsuru Tokubetsu Junmai blends Yamada Nishiki and Gohyakumangoku polished to 60% from Aichi Shuzo in Aishō-cho, Shiga. Founded in 1869 near Lake Biwa with GI Shiga certification, this tiny award-winning brewery (~1,000 liters/year) combines two complementary sake rices with Suzuka mountain range water for a well-rounded, elevated tokubetsu junmai.
