Tomitsuru Junmai Daiginjo Zuiun (瑞雲), meaning auspicious clouds, uses Yamada Nishiki polished to 40% from Aichi Shuzo in Aishō-cho, Shiga. Founded in 1869 near Lake Biwa, this tiny brewery (~1,000 liters/year) with Feminalise Gold and 3 consecutive National prizes achieves extraordinary daiginjo refinement with Suzuka mountain range water and GI Shiga-certified pure brewing.
