Tomitsuru Daiginjo Premium uses Yamada Nishiki polished to 40% in the highest-grade expression from Aichi Shuzo in Aishō-cho, Shiga. Founded in 1869 near Lake Biwa, this tiny brewery (~1,000 liters/year) holds GI Shiga certification and produces award-winning sake with the Suzuka mountain range water, achieving daiginjo refinement with extreme polishing precision.
