Every drop of rice in this tokubetsu junmai is Yamada Nishiki, polished to 65%, brewed with Nada's miyamizu water at Sawanotsuru's Nishigo kura. The generous koji ratio amplifies rice-derived umami, resulting in a fine-grained mouthfeel with well-knit sweetness and acidity.
