Description

Sawanotsuru was founded in 1717 in Nada-ku, Kobe, when a rice merchant named Kihee began brewing sake as a side venture, eventually giving the operation its enduring name, meaning 'crane of the swamp,' drawn from Japanese mythology. The brewery draws on Miyamizu, the famed hard water of the Rokko Mountains that has driven Nada's dominance in Japanese sake production for centuries. This Honjozo Namazake is never heat-pasteurized at any stage of its production, so it ships direct from tank to bottle with the raw freshness and lively texture of just-pressed sake intact. The sake meter value sits at +2.5 with 13.5% ABV, giving a light, slightly off-dry character typical of shiboritate-style namazake.
