Description

A junmai ginjo using Yamada Nishiki polished to 50% from this Yokkaichi brewery, which uses Suzuka mountain groundwater and applies daiginjo-level hand-washing and ultra-thin koji-spreading techniques even to its standard lineup. The palate shows a clean ginjo aroma, elegant umami, and a composed, lightly dry finish.
