Takahashi Shuzo in Yokkaichi, Mie Prefecture, founded in 1862 and once entrusted with producing sacred sake for Ise Jingu and hundreds of local shrines, now channels that heritage into its Tenyuurin brand, a name drawn from the writings of the Chinese philosopher Zhuangzi conveying unconstrained freedom and beautiful refinement. Every batch is processed with hand-rinsed rice, precision water absorption control, and ultra-thin koji cultivation, aiming for a clean, food-complementing style that allows dishes to lead.
