Description
Yamada Nishiki rice polished to 35 percent forms the base of this junmai daiginjo, collected using the shizuku method so that only the free run drops are gathered without any mechanical pressing. Expect a nose of lime, mint and lychee, followed by honeydew, pear and fresh cut hay on the palate, framed by vibrant acidity and a clean, anise like finish.
